Soft Gingersnap Holiday Cookies

These are Santa’s favorite cookies.

Dry mixture:

2 c flour

1 tsp. ginger

2 tsp baking soda

1 tsp cinnamon

1/2 tsp salt

Measure together, then sift into whipped sugar/butter mixture

Whipped sugar/butter mixture:

Cream together 3/4 c salted butter

1 c sugar

1 large egg

1/4 c molasses

After dry ingredients are added to wet, form dough into balls. Roll in sugar. Chill before cooking or take directly out of the freezer. Bake at 350, for about 11 minutes. Do not overcook.

I used a combination of sanding sugar, white and red along with granulated sugar to roll the balls in before baking.
